Soda Bread

This is a recipe Carla made at her cookery class at school. It’s delicious and very child-friendly - a good way to introduce your children to breadmaking. Makes two small loaves.

Soda Bread goes very well with Roast Pumpkin Soup.

225g wholewheat flour
225g plain flour
1 tsp bicarbonate of soda
A large pinch of salt
50g margarine
300ml plain yogurt
A little milk may be required

Heat the oven to 200 degrees C (fan oven 180 degrees C), Gas Mark 6. Grease a baking tray.
Mix the flours, bicarbonate of soda and salt in a large mixing bowl. Rub the margarine into the dry ingredients. Make a well in the centre and add the yogurt. Mix well. You may need to add a little milk to make a soft dough.
Turn the dough on to a floured surface and knead for 2 minutes. Divide the dough into 2 and form into round loaves. Place on a greased baking tray. Make 8 deep cuts into the dough to form individual portions. Place in the oven for 15 minutes. Then turn down the oven to 190 degrees C (fan oven 170 degrees C), Gas Mark 5 and bake for another 20 mins.
Remove from the oven and cool on a wire rack.
