Apple and Sausage Loaf

Very quick and delicious with baked potatoes and seasonal green vegetables. Makes enough for 4 to 6 people.

0.9kg sausage meat (the best you can find)
250g cooking apples, peeled and chopped
2 tsp chopped sage (or herb of your choice)

Heat the oven to 190 degrees C, Gas Mark 5. Line a 19 by 9 by 6cm loaf tin.

Divide the sausage meat in half. Cover the bottom of the loaf tin with one half of the meat. Spread the chopped apples over to make the middle layer leaving a 1cm margin around the edges. Sprinkle the herbs on top. Press the second half of the sausage meat on top of the apples, making sure you press the edges hard against the edges of sausage meat on the lower layer to seal. Bake uncovered for 40 mins. Turn out and slice.
