Fantastic Fish Pie

Fantastic Fish Pie

A family favourite (as long as you get all the bones out!), this can be prepared ahead of time and frozen if you have people coming.

2 kg potatoes, peeled
800g mixed fish - cod, smoked haddock and salmon is a good combination
568ml/1 pt milk and a dash for the potatoes
Bay leaf
200g cooked prawns
200g cherry tomatoes
75g butter
50g plain flour
4 tbsp chopped parsley
Heat oven to 200°C/Gas Mark 6. Grease a 2 litre baking dish. Put the potatoes on to boil until cooked. Meanwhile, place the fish in a pan and pour over 1pt milk, add bay leaf and simmer for10 min. Lift fish from the pan, flake and remove any bones and skin. Put in the baking dish together with the prawns and tomatoes. Remove the bay leaf from the milk and reserve liquid. Melt 50g butter in a small pan, stir in the flour and cook gently for 1 minute. Slowly add the reserved milk, stirring until fully absorbed before adding more. When all the milk is added, bring to the boil and continue to cook until the sauce has thickened. Stir in chopped parsley. Pour over fish.

When the potatoes are ready, drain and mash them with the remaining butter and a dash of milk. Spoon over the fish and roughen the surface with a fork. Bake in oven for 30-40 min until the potato is browned.
