Maypole Cake

This is a basic Victoria sponge decorated with flowers and ribbons to celebrate the arrival of summer.

To decorate the cake, you’ll need:

Butter icing
1 1/2m thin ribbon or strips of thinly cut paper
Striped candy stick or stick wound with ribbon
Iced flower decorations
Fresh flowers
Edible glue – not essential, can be bought from specialist cake decorating shops


Sandwich the cake together with half the butter icing. Spread the remainder on top. Place the candy stick in the middle. Cut the ribbon into 3 equal lengths and stick to the top of the candy, using a blob of icing or the glue, so that they fall to the edges of the cake. Decorate with lots of fresh flowers.
