Delicious with any roast meat, but especially with Slow Roast Lamb.
Serves 6 to 8
8 medium-sized potatoes, sliced
2 cloves garlic, crushed
3 bay leaves
4 tbsps olive oil
Juice of 4 lemons
Seasoning to taste
Heat the oven to 200°C, Gas Mark 6. Thinly layer the sliced potatoes with the garlic and bay leaves in a large, shallow ovenproof dish. Drizzle the oil and lemon juice over and season well. Bake in the oven for about an hour until the top is slightly crispy.
