Dough Balls

The kids wolf plates of these down whenever we go out for a pizza, so we thought we’d try making them at home. Cooked over a bonfire and dipped in hot garlic butter, they are something special.

Half tsp fast-action yeast
300g strong white flour
Half tbsp sugar
1 tbsp milk powder
1 tsp salt
2 tbsp olive oil
210ml warm water

Using a bread machine:
Make dough using Pizza Dough mode.

By hand:
Put all dry ingredients in a bowl and stir together. Make a well in the centre and add the oil and warm water. Begin to incorporate the flour into the liquid until a dough is formed. Flour a work surface and knead until the dough springs back when a thumb is pushed into it. Place back in bowl, cover and prove for 30 mins.

To cook the dough balls:
Take the bowl down to the fire. Push a dough ball on to a whittled toasting fork, and cook in the heat of the fire (avoiding direct flames) until brown and crispy.
